Mario's roots are in Abruzzo, the mountainous region in central Italy where arrosticini come from. There they are not a party snack but something you eat every summer, in the garden, at a long table, with everybody around.
He brought that way of doing things with him to Belgium. He grills on a proper fornacella, the long narrow Italian grill built specifically for arrosticini, and works with charcoal only. The meat gets nothing but salt, because the fire does the rest.
What started as grilling for friends and family grew into catering for birthdays, communions, company parties and weddings across Belgium. The approach has never changed: pure, authentic and perfectly grilled over an open fire.
